We have an abundance of local apples in Edmonton and area and we will be teaching a new class this year to show 3 ways of preserving the bounty. These methods focus on using local apples as they are usually not sprayed with chemicals or artificial fertilizers, have not wax coating the skins and are grown right here in the city. The skins are tender and break down easily, so there is no need to peel them before use. This makes preparation techniques much faster AND you get the nutrition and colour from the skins. 1. Applesauce: We will teach you quick ways to turn local apples into a delicious applesauce that does not use any added sugar. You will make it from start to end and have a sample to take home. It tastes wonderful and can be used to make fruit leathers and roll-ups or just for snacks or dessert as it is. Also unsweetened applesauce can be used in baking and other recipes to replace added sugar and fats.
2. Apple Pie Filling: you will learn how to make a delicious apple pie filling that is cooked and stored in 1 L jars for use later in the year. This filling is jam-packed with apples and just about the best filling you have tasted!! You will get hands-on experience in making this filling and learn how to change it up by adding other fruits, nuts and other spices. Everyone will get a sample to take home along with the recipe and suggestions. Note: We use a commercial cornstarch for thickening that is very stable during cooking and reheating. It will be available for sale at the end of the class - $10 for a 500 g package which will make quite a few pie fillings.
3. Dehydrating: We will demonstrate how to dehydrate apples to make apple chips and to use your applesauce to make fruit leather. Due to limited time, you will see how to set it up and taste samples of product made by dehydrating.
