Crimson Marmalade with Irish Whisky

A lovely tart marmalade made with Seville oranges and our local crab apple juice. The crab apple juice keeps it very tart and turns it to a crimson colour. Then to notch it up a bit we have added Irish Whisky to give it a smoky finish.

Available online in 250 ml jars*

USES: Great for breakfast items. But don’t stop there!!  

For chicken consider combining marmalade with rice wine vinegar, black pepper and fresh garlic. Brush this over the chicken, cover the dish and bake it in the oven until the chicken is cooked. Check and add chicken stock if the bottom of the pan is starting to burn.  

For a pork roast. Combine ½ cup Crimson Marmalade with 1 teaspoon black pepper and hot sauce such as Sriracha sauce to taste.  Then 30 minutes before end of cooking, glaze the roast with the Marmalade glaze.  Spoon the drippings from the bottom on the pan over meat slices.  

Braising meats such as pork or lamb – combine 1/3 cup marmalade with a dark beer such as Guinness, onions, tomato paste, salt and pepper and meat stock for a pleasant brightness of flavour.
